Coolship

The louvred panels of the coolship room invite the wild yeast to enter the brewery building. The wort is allowed to stand in the coolship overnight during which time wild yeasts, resident in the coolship room, seed the wort to initiate spontaneous fermentation.

The coolship is relatively shallow, allowing the wort plenty of contact with the air. The wort is then pumped into the cedar-clad fermenting vessels.
