Before modern brewing science, little was known about yeast. Wild yeast has always existed, although pioneer brewers called it "God is Good."

At Melbourn Bros. unlike other breweries in Great Britain, we rely on the natural "wild yeast" which gives our beer intense character and the healthy acidity necessary to balance the addition of fresh fruit.

Bhe brewery can be quite cold, especially in the winter when most of the brewing is done. Summertime temperatures produce too many wild yeasts.
